The unique Pastochef (Pastry Chef) helps produce a wide variety of confectionary delights and food items including, but not limited to: chocolates, Bavarian cream, ice cream mixes, pochee fruit, rice puddings, custards, bechamel, mayonnaise, soups, sauces, gravies, porridge, scrambled egg, meat pie fillings, jams, etc.
PASTOCHEF
The Pastochef is a miracle of modern electronics. Through the use of microprocessor technology and convenient, easy-to-use touch pad controls, the Pastochef can be programmed to automatically perform many different operations.
Its main application is in the preparation of confectionary delights. Among its capabilities are: tempering of plain chocolate, milk chocolate, and colored chocolate; production of confectioners custard for use as a filling in cakes, cream puffs, croissants, etc.; pouchee fruit (sugar-stewed fruit) with fruit whole or in chunks, for use in cakes, ice cream cups, etc.; fruit liqueur or chocolate Bavarian Cream for use in sophisticated desserts; the preparation of ice cream mixes; etc..
The Pastochef may also be used to prepare: rice puddings, bechamel, mayonnaise, soups, sauces, gravies, porridge, scrambled eggs, meat pie fillings, jams, and more.
The Pastochef solves common problems automatically - it is programmed with a specific cycle for mixing flour, sugar, and eggs which results in a smooth and homogenous mix which will easily disolve in milk when heated.
Besides reaching the pasteurization temperature threshold, cooking continues for an adequate time to ensure that starches fully coagulate, ensuring a smooth product.
Cooling takes place while the mixture is being gently stirred to avoid over-beating. Thickening occurs as the temperature goes down.
The Pastochef reduces temperature from +63ºC to +3ºC in less than 1 hour. Through the pasteurization process pastry cream and flavored cream are produced and stored under fully hygenic conditions, enhancing the quality and shelf life of the product.

LID AGITATOR LIQUID PRODUCTS THICK PRODUCTSMade of a special, alcohol-proof, clear polymer it allows the monitoring of the product being prepared while at the same time being resilient to abuse. Its pivoting blades are designed to scrape perfectly the walls of the vessel while its bottom part is designed to avoid the retention of dry ingredients. The sanitary extraction tap can be operated with one hand. Liquid products, such as hot chocolate, ice cream mix, …etc, flow out with the tap in the first position. A safety catch protects the second tap position which allows thicker products, such as confectionary cream and almonds with honey, to flow out of the front opening.
SHIELD SHELF DESIGN SERVICEThis accessory is very useful when extracting hot liquids. It fits over the tap to prevent the hot liquid from splattering out. This accessory is made of stainless steel and covered by a rubber mat. It can support containers and trays of various sizes at three different heights. Operator friendly rounded corners are safer and nicer. The control panel is easy to read and understand. The PASTOCHEF RTX can be connected directly to a service centre via a modem. Working data can be sent and received for remote diagnosing and adjustment of problems. Additional Features:
